Culinary Innovator Partners with Connecticut Community College in Creating Sustainable Food-Service Management Program

Manchester, CT (I-Newswire) June 29, 2012 - John Turenne, a Connecticut chef and sustainable food innovator who has worked with culinary celebrities such as Alice Waters and Jamie Oliver, will teach one course in a multi-discipline program designed to prepare students for work in a field that is transforming the food-service industry.

There is little debate among experts that worldwide demand is growing for healthier, more environmentally friendly food production. Working with MCC?s Hospitality Department faculty, Turenne designed the course to prepare food-service professionals to shape the industry?s future as it evolves. He will co-teach it with Molly Devanney, vice president of Highland Park Market, a Connecticut grocery store chain that promotes and sells locally produced foods.

Turenne has literally written the book on sustainable food-service management ? one chapter of the courses? text book, anyway.

The course is a reflection of his deeply held belief that a sustainable food system enhances individual health, the local economy and the planet as a whole. As president and founder of Sustainable Food Systems, a consulting firm based in Wallingford, Turenne has spent years refining techniques and developing practices that are both environmentally responsible and profitable.

The MCC sustainability program is the college?s newest option for a food-service management degree. It combines food-service training with courses in human health and environmental science, giving students what Turenne calls a ?big-picture? understanding of the issues, policies and practices surrounding the sustainable food movement.

The course will help students see how their decisions about food purchasing and preparation, waste control, energy and water use and interaction with vendors influence individual health, business success and profitability, the local economy, land use, and the long-term health of the nation?s food and agricultural production network.

Turenne is often sought as a public speaker and mentor, but has never before taught in a classroom setting. He said is eager to share his insights and techniques with MCC?s culinary students as an extension of his effort to ?make the world a better place.?

Turenne said he realized that the sustainability movement was transforming the conventional food service when he was working as the executive chef at Yale University?s dining service in 2001. Among the students was the daughter of chef and restaurateur Alice Waters, a pioneer and internationally known advocate of a locally based food economy.

With the blessing of the Yale president, Waters toured Turenne?s kitchen and handed him a copy of ?Fast Food Nation.? She persuaded the school to look for a fresher, more local and more sustainable model for its campus food service; and in his research, Turenne had ?an epiphany,? he said.

?I couldn?t ignore it,? he said. ?I realized this is a direction we have to go in.?

A chef who once defined success only by how effectively he could reduce costs became a champion of moving toward a healthier and more socially responsible food delivery network.

Of course the difficult part is in applying sustainable practices in ways that not only produce better food, but better food that can be delivered profitability.

That?s where Turenne?s long career in the conventional food service proved invaluable. It enabled him to become a key participant at the Yale Sustainable Food Project; and, seven years ago, to create Sustainable Food Systems. Since then he has been helping clients profitably ?bridge the gap? between conventional and sustainable techniques and practices.

Turenne?s company worked behind the scenes in West Virginia with British chef Jamie Oliver in his production of the Food Revolution television program. He was also one of nine chefs selected to work with the Obama Administration in the development of the USDA?s Chefs Move to Schools initiative to combat childhood obesity.

Turenne also wrote on chapter of the text he and Devanney will be teaching from: ?Greening Food and Beverage Services: A Green Seal Guide To Transforming The Industry.? They will be using that text and others, he said.

Jayne Pearson, chair of MCC?s Hospitality Department, knew of Turenne through their mutual membership in the Connecticut chapter of the Northeast Organic Farmer?s Association. Turenne serves on that organization?s board of directors.

The American Culinary Federation, which accredits MCC?s program, ?is pushing for all their schools? to institute a similar program, she said. So far, however, only a handful of culinary colleges have actually launched them.

Turenne?s fall class will be open to both matriculating students and, with Pearson?s approval, members of the professional food-service community.

Congressional finally provides US Open test

(AP) ? Tiger Woods feels like he is making up for lost time by missing the U.S. Open last year.

Woods wasn't at Congressional for the 2011 U.S. Open, so it was difficult for him to compare the opening round Thursday in the AT&T National with the major known as the toughest test in golf that was played at Congressional a year ago, the one that hardly lived up to his reputation.

But he listened to Nick Watney and caddie Chad Reynolds, who confirmed his suspicions.

"They were saying at least during the Open, you could get it to land on the green from the rough," Woods said. "They had graduated rough. There's no graduated rough here this week. If it's not in the fairway, then it's in the deep stuff. So it's a different setup. It's hard and fast, and we have to be careful a lot of times, and when you have an opportunity to be aggressive, better do it."

Bo Van Pelt did it better than anyone.

He kept bogeys off his card and picked up an extra shot when his wedge spun back into the hole for an eagle. It's a formula that would work well at a U.S. Open, which is what Congressional felt like Thursday on his way to a 4-under 67 and a one-shot lead.

Woods, who struggled at times with his wedges, opened with a 72 and was starting to feel that this was his third U.S. Open of the year ? Bay Hill, which was firm and brittle in the final round and yielded only two rounds in the 60s; and Olympic Club two weeks ago, which really was a U.S. Open and was won by Webb Simpson at 1-over par.

"A couple shots today, the ball is bouncing as high as it flies," Woods said. "It's an adjustment we have to make."

Congressional took a beating last year when unfavorable weather conditions in the weeks leading up to the U.S. Open and overnight rain during the championship made the venerable Blue Course a pushover. Rory McIlroy had a record score of 16-under 268 for an eight-shot victory.

The AT&T National was more of a grind.

"It's certainly, I think, a little retribution for what happened last year," Woods said. "Don't be mad at me. I didn't play."

A year ago at the U.S. Open, there were nine rounds in the 60s and 21 players broke par in the opening round. On Thursday in the AT&T National, only seven players were in the 60s and 22 broke par. Four players failed to break 80, just like a year ago, only the 120-man field at the AT&T National is filled with PGA Tour players. For the U.S. Open, two of those rounds in the 80s were by amateurs, a third by Ty Tryon.

"I think everybody knows the golf course last year just wasn't quite ready to be set up the way they wanted it to be set up, and it's unfortunate," Van Pelt said. "I know they spent a lot of time and money to get it ready, and some things are out of your control. I said it last year ? they needed one more year, and basically you could have a U.S. Open here this week if you wanted it.

"That's the way it's set up."

The sunshine and heat figure to make it tougher over the next few days, especially on the weekend.

Watney, the defending champion (at Aronimink) who was in the large group at 70, said the more fair comparison was with the U.S. Open held two weeks ago at The Olympic Club. Michael Thompson led after the opening day at 4-under 66, and Simpson won at 1-over 281.

As for Congressional?

"If last year was a 4 out of 10 on firmness of greens, this was a 7 trending to an 8," Watney said, who didn't major in economics at Fresno State.

Van Pelt only twice struggled to make par, making a 30-foot putt on the 15th and a 20-footer on the par-5 sixth hole. Equally impressive was his bunker shot on the 18th to tap-in range, and he took those vibes to the first hole. After an aggressive drive, he had 93 yards to the hole and figured it was a good time to put to test all the work he has done on his wedge play. It worked out better than he imagined, holing it for an eagle.

"I actually thought it had kind of spun back in front of the hole, and all of a sudden this guy behind the green started going nuts," Van Pelt said. "You never know when those are going to happen, so it's nice to get a deuce."

Even better was not making a bogey and giving himself a good start going into his Friday morning start of the second round.

Woods never got it going, and he made two blunders late in the round with his bunker play, which also was suspect in the U.S. Open two weeks ago. After making a 15-foot birdie putt on the 14th, he put his approach into the bunker right of the green on the 15th. His shot barely got out of the sand, and he stubbed a chip, leaving him a 7-footer that he had to make for bogey.

On the next hole, he was 244 yards from the hole when he pulled a 4-iron to the bunker short of the green on the par-5 16th. The gallery groaned when the ball emerged from the bunker and barely got onto the green, costing him a reasonable birdie chance. He two-putted from 30 feet for par.

Woods attributed it to the amount of sand in the bunkers and that his 60-degree wedge "is not built for this much sand."

"So I have to make an adjustment and hit the ball a little bit closer, make sure I hit a little closer to the golf ball," he said. "And I just didn't do it."

One balmy evening in Tunis three weeks ago, a young man named Redouan and several friends piled into a car and headed for a nearby art exhibit, intent on burning paintings.

By then the exhibit had already been ransacked by deeply conservative Salafi Muslims like Redouan. The vandalism triggered days of rioting in Tunis and other cities. Although some of the rioters were Salafis, most appear to have been simply young, poor, and angry.

It was the latest in a series of protests, riots, and labor strikes since Tunisians ousted dictator Zine el Abidine Ben Ali last year.?The disturbances highlight the new stakes of an old problem: chronic economic malaise that leaders now fear could endanger Tunisia?s emerging democracy.

Similar problems face Tunisia?s Arab Spring peers, Egypt and Libya. In all three, youth unemployment, corruption, wealth gaps, and under-development helped fuel uprisings that toppled dictators. Those leaders are gone, but the economic problems that led to their downfalls persist.?

?We?re not forecasting a second revolution in any of the three countries,? says William Lawrence, lead North Africa analyst for the International Crisis Group (ICG), a Brussels-based NGO. ?But a combination of bad economic trends and poor political process could create a crisis of legitimacy in any one of them.?

Votes, but where's the bread?

Tunisia?s President Moncef Marzouki said in an interview this month with National Public Radio that he feared economic grievances could lead to ?a revolution within a revolution.? Leaders have appealed for patience while the government tries to keep order and start reforms.

Egypt, meanwhile, has plunged into political limbo that many fear could see the gains of its uprising reversed.?The ruling military council has dissolved a parliament led by the Muslim Brotherhood and curbed the powers of the new president, the Brotherhood?s Mohamed Morsi. Whoever prevails must tackle high unemployment and anger over the army?s business interests.

In Libya, militias that joined forces to overthrow Muammar Qaddafi last year have taken to squabbling, sometimes violently. An interim government appointed by the National Transitional Council (NTC) is struggling to keep the peace as economic problems, from shoddy infrastructure to youth unemployment, breed trouble.?

?What is the future for all these young Libyans? At the moment, for many it seems to be in belonging to a militia,? says John Hamilton, a contributing editor to African Energy magazine and director with Cross-Border Information, a British risk assessment firm.

Where states stand on implementing health care law

Here is a look at where each of the 50 states stand on implementing President Barack Obama's federal health care overhaul, which the Supreme Court ruled Thursday can go forward with its aim of covering more than 30 million uninsured Americans.

ALABAMA

NUMBER OF UNINSURED: 720,000 state residents are uninsured, or about 15.4 percent.

WHERE THE STATE STANDS: Republican Gov. Robert Bentley, a physician, created a commission in 2011 to recommend a plan for a health insurance exchange, but he successfully opposed efforts by some legislators to enact one in May. Critics said the bill would have limited the exchange to companies operating statewide, which is one at this point. Bentley said it was premature to act before the Supreme Court ruled.

ALASKA

NUMBER OF UNINSURED: 125,000 state residents are uninsured, or about 18 percent.

WHERE THE STATE STANDS: Alaska, which is among the states that sued over the constitutionality of the federal health care law, has yet to implement a health care exchange. The health department has hired a consultant to help design one, and that report is expected soon.

ARIZONA

NUMBER OF UNINSURED: 1.28 million state residents not covered, or about 19 percent

WHERE THE STATE STANDS: Arizona is among the states challenging the constitutionality of the health care overhaul. The lawsuit covers about 22,000 people statewide, including some 14,000 people in the Phoenix area. Republican Gov. Jan Brewer's administration is moving to implement part of the contested law by reviewing health insurance rates to see if they should be labeled unjustifiably high. The state also has accepted a federal grant to create a state health insurance exchange.

ARKANSAS

NUMBER OF UNINSURED: 539,000 state residents are uninsured, or about 19 percent.

WHERE THE STATE STANDS: Arkansas decided on a federal-state partnership for its health insurance marketplace. Legislators blocked a bill by which the state would have created its own insurance exchange but have since accepted a grant that will allow it to at least have a role in the federally created exchange.

CALIFORNIA

NUMBER OF UNINSURED: NUMBER OF UNINSURED: 7,209,000 state residents are uninsured, or about 19 percent.

WHERE THE STATE STANDS: California has worked to be a model for the health care law and has begun implementing parts of it already, including creating the beginnings of health care exchanges to provide consumers a marketplace to purchase insurance policies starting in 2014. The state has also already banned insurers from refusing coverage for children with pre-existing illnesses and young adults are allowed to stay on their parents' plans through age 26 in California.

COLORADO

NUMBER OF UNINSURED: 656,000 state residents are uninsured, or about 13 percent.

WHERE THE STATE STANDS: Colorado lawmakers passed legislation in 2011 to set up health insurance exchanges, and a commission is in the process of implementing them. The exchanges are set to start October 2013.

CONNECTICUT

NUMBER OF UNINSURED: About 377,000 state residents are uninsured, or about 11 percent.

WHERE THE STATE STANDS: Connecticut has hired staff and a board of directors to begin implementing health care exchanges and have them in place by the 2014 deadline set by the federal law. The state already is allowing people under 26 years old to stay on their parents' health insurance policies, which is part of the federal law.

DELAWARE

NUMBER OF UNINSURED: Between 100,000 and 110,000 Delaware residents are uninsured, about 11 percent of the state's population.

WHERE THE STATE STANDS: Delaware officials are working on a health care exchange. State officials also are accepting public input as they come up with minimum coverage requirements that must be included in health care plans for individuals and small businesses.

FLORIDA

NUMBER OF UNINSURED: 3.85 million Floridians are uninsured, or about 21 percent.

WHERE THE STATE STANDS: Republican Gov. Rick Scott ordered the state not to accept federal money for implementing the health care law after he took office last year. Florida has rejected or declined to pursue more than $106 million and has returned $4.5 million. The state has its own health insurance exchanges, mainly for small businesses but without an individual mandate. The state has not implemented an exchange that would meet the requirements of the federal law.

GEORGIA

NUMBER OF UNINSURED: 111,000 state residents are uninsured, or 19 percent.

WHERE THE STATE STANDS: Georgia has done nothing to implement a health care exchange. Lawmakers have introduced bills that would either allow or hinder implementation of the law, though none have passed.

HAWAII

NUMBER OF UNINSURED: 97,000 state residents are uninsured, or 7.7 percent.

WHERE THE STATE STANDS: Hawaii has been moving at full speed in anticipation the overhaul will be upheld. It joined several states last year in filing a friend-of-the-court brief in support of the law. Gov. BRUSSELS (AP) ? A European court on Wednesday upheld most of a massive fine levied against Microsoft by the European Commission's competition watchdog, closing a case against the software giant that began in 1998.

In an appeals ruling, the General Court of the European Union rejected Microsoft Corp.'s request to dismiss the fine levied in 2008, but did trim it by ?39 million to ?860 million ($1.1 billion). Counting two earlier fines, the case has wound up costing Microsoft a grand total of ?1.64 billion.

That's the most ever resulting from a single antitrust case in Europe, though in 2009 Intel Corp. was hit with the largest single fine, ?1.09 billion.

The court in Luxembourg said its decision "essentially upholds the Commission's decision and rejects all the arguments put forward by Microsoft in support of annulment."

The ?860 million fine is a "penalty for noncompliance" with the watchdog's 2004 order for Microsoft to make computer programming code available that would allow competitors' products to interface properly with Microsoft's server software.

Microsoft did so, but at a price the Commission said was so exorbitant it amounted to not complying.

The court upheld that finding, but said Microsoft deserved a small break because of a letter the Commission sent in 2005 saying the company didn't have to freely distribute code that wasn't its own and was freely available elsewhere. That letter gave Microsoft some room to think it was okay to continue acting the way it had until 2004, and should have been "taken into account in determining the gravity of the conduct found to be unlawful," the written decision said.

The Commission's top regulator Joaquin Almunia said the judgment "fully vindicates" his office's action against Microsoft and "brought significant benefits to users."

"A range of innovative products that would otherwise not have seen the light of day were introduced on the market," thanks to the Commission, he said.

Microsoft was less enthusiastic.

"Although the General Court slightly reduced the fine, we are disappointed with the Court's ruling," the company said in a statement.

When my youngest daughter first told me she wanted to go see BRAVE by Disney, I really wasn?t sure what the movie was. ?I didn?t know if it was people, or anime, or cartoon, no idea. ?Then I read up on it, and decided, ?eh, seems like something ok enough to hang out with my kid with? so my hubs met us after work one day, and we went. ?Although it?s shown in 3D, as well as 2D, we selected 2D so no glasses were needed (which, btw, with my astigmatism and glaucoma issues, I was thrilled that was the one she chose, lol). ?First, let me tell you about the movie, THEN I?ll tell you my thoughts on it?

I wish this clip also showed her horse, he?s HILARIOUS, lol has such a fun disposition and mannerisms, lol ?This movie is one for the entire family, not just kids, truly. ?It?s easy to follow, and even though it seemed like it took 15 min or so for the story plot to settle in and get figured out, once the turning point hit, it was non-stop fun and action that we loved. ?We laughed a LOT at the antics of Merida and her horse, AND her 3 little brothers?along with many of the other characters. ?It?s one that?s not just for renting, I plan to buy it for our movie library when it comes out.
